Pumpkin + Vanilla Cream Cheese = Perfection!

When the air starts to get crisp and the leaves start to fall, my family’s first request is my classic Pumpkin Roll.  It’s their all time fav and the perfect compliment to morning’s first cup of steaming coffee. Ahhhhh. All that pumpkin goodness, combined with the perfect blend of cinnamon, cloves and a vanilla cream cheese filling is a seasonal must!  I will be making multiples for next week’s Thanksgiving festivities…they don’t last long!  One without nuts for my not so nut loving 12 year old and several with a pecan sprinkled crust for the rest of us. If you want your guests to ohh and ahh, and then come back for seconds, give this recipes a whirl!

Ingredients:

3/4 cup of all purpose flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. ground cinnamon

1/2 tsp. ground cloves

1/4 tsp. salt

3 large eggs

1 cup sugar

2/3 cup pure pumpkin puree (I use Libby’s)

1 cup chopped pecans

 

Preheat over to 375* and grease a 10″x 15″ jelly roll pan. Line with wax paper and the grease and flour wax paper. Lay out a smooth cotton kitchen towel and sprinkle it with powdered sugar. In a medium bowl, combine dry ingredients and mix well. In a separate large bowl, beat eggs and sugar until thick, then beat in pumpkin. Stir in flour mixture and spread evenly into the jellyroll pan.  Sprinkle the chopped pecans on top and bake 13-15 minutes until the top springs back.  Immediately turn out onto the sugared towel, pecans side down and carefully peel off the wax paper.  Quickly roll the sheet bread up lengthwise and place on a wire rack to cool.

 

Vanilla Cream Cheese Filling:

1 8oz. block cream cheese, softened

1 cup sifted powder sugar

6 Tbs. margarine, softened

1 tsp. pure vanilla extract

 

combine all filling ingredients in one are bowl and stir until smooth.  Unroll cooled bread and spread the filling evenly over entire inside surface.  Carefully roll the bread back up, wrap in plastic and place in refrigerator for al least 4 hours. Remove, slice and sprinkle with powder sugar. Serve immediately.
