Saturday at the Strawberry Patch

Strawberries2My boys and I spent this past Saturday picking one of my favorite early summer berries! It was an absolutely gorgeous day, the sun was beaming and the breeze kept us cool as we worked. The strawberries in Arkansas are right at the end of their peak season, so every single one we got was so ripe and juicy, I had to keep fending Cade off from eating them straight out of the bucket. We got a huge load of them, so I spent Sunday making chocolate covered strawberries, strawberry shortcake and strawberry cupcakes, Yum! My strawberry cupcake/cake recipe is one of my family’s all time favorites and it’s the perfect compliment to strawberry season. Try it out, it’s easy peasy, and delightfully yummy!

Scrumptious Strawberry Cake

1 Box Strawberry Cake Mix
1 Box Strawberry Jell-O
½ Cup Wesson Oil
4 Eggs
½ Cup Water
½ Cup Sliced Strawberries mixed with 1 Tsp. of Sugar (let sit for 30 minutes for sugar to dissolve)

Mix cake mix and Jell-O powder together, add Wesson oil and water and beat until well blended. Add eggs one at a time, beating after each addition. Last add strawberries and mix well. Pour mixture into cake pan of choice and bake at 350 degrees for 30-35 minutes (if making cupcakes bake approx. 23 min)

Icing:
½ Stick of melted Margarine
1 Box of Powdered Sugar
½ Cup of sliced Strawberries mixed with 1 Tsp. of Sugar (let sit for 30 minutes for sugar to dissolve)

Mix until smooth and spread on cake
